In the words of Mark Bittman, "In Mexico, for some reason, popsicles are just better". In Mexico, they're called paletas, and you can make them at home using whatever ingredients you want. BRILLIANT. Traditional ingredients include items such as lime juice, fresh fruit, and/or spices or hot peppers, but you can use pretty much whatever delicious items you have around.
A few years ago, my roommate and I were inspired to make paletas by some chatter on the web (maybe on Gothamist?), but we had no ice-pop molds, so we resorted to mixing orange juice concentrate with lime juice and sugar and pouring the mixture into an ice cube tray with a toothpick in each cube. The whole thing was really messy and a total hassle, so we didn't really follow up on it, although it was delicious.
For some reason, though, the idea came up again this summer. I mentioned it to P, and he spotted some popsicle molds on a trip out to buy something else... and voila! Delicious things started happening in my freezer! Since the pop molds arrived, they probably haven't been empty for more than twenty-four hours. We are popsicle-making machines!
Here's the list of our creations so far:
- Strawberry chunks with this crazy Mexican strawberry cornstarch drink, Maizena (+ chocolate chips)
- Strawberry, banana, lime, and cornstarch drink
- Banana, lemon, and orange (from the Bruton Family cookbook)
- Banana, lemon, and orange with mango and mint
- Strawberries and more mint
- Watermelon and lime
- Watermelon and lime with cumin, coriander, chili powder, and cayenne (I loved this one, but P wasn't that into it)
- Chocolate and peanut butter
- Chocolate w/ orange zest, cayenne, and cinnamon
